German Black Forest Cake

German Black Forest Cake, or Schwarzwaelder Kirschtorte as the Germans would say, is a scrumptious dessert made with cherries, chocolate, butter, sweet cream or whipped cream (and a few more ingredients of course, click here for the recipe).

This fabulous layer cake is not only a chocolate lovers dream, but also a sinful cherry lover’s favorite!

The origins of this torte (torte is cake in German) is unknown. Historians believe that this chocolate delight was originated in the Black Forest of southern Germany (the region to the west of Bavaria).

The cake is a favorite everywhere in Germany, and also well known in the United States.

Europe vs. United States

German Black Forest Cake can be prepared in many different ways, but the most traditional is as a chocolate layer cake.

In Europe, the cake is usually prepared with whipped cream and cherries between each layer.

Also, in Europe the cake is prepared with sour cherries, not necessarily the sweet cherries or pie filling usually used when prepared in the United States.

Also, when the cake is prepared in the U.S. sometimes only chocolate is used in between the layers and the cherries and cream only are used on the top of the cake as a topping or garnish.

The decoration of the cake usually depends again on where the cake is being prepared.

Often there are cherries, cream and chocolate, the formats can vary greatly. Many times the cake will have a ring around the top outside of the cake made entirely of cream.

Cherries then are either used as filling in the middle of the top or decoratively placed throughout the outside ring and inside of the ring of cream.

If this method is used, the top of the cake is also frosted with chocolate frosting. It is not uncommon though, to have cream covering the entire outside of the cake and have cream, cherries and chocolate shavings decorating the top.

Another variation between the United States and Europe, is the addition of Kirschwasser in the preperation of the cake.

Europeans tend to add this cherry brandy when making not only German Black Forest Cake, but also some chocolates and fondue. Instead of Kirschwasser, sometimes rum is used instead. Americans tend not to include alcohol when making this cake.

However Schwarzwaelder Kirschtorte (Black Forest Cake) is made and decorated, the result is always a masterpiece and quite delicious.
